Tempeh and Veggie Wrap


  • Tempeh- 4 ounces
  • Red Beans- ½ can
  • Onions – one small, one half of one medium size
  • Peanuts – 2 tablespoons
  • White Rice – one cup (dry), makes 2 cups when done
  • Whole Grain Wrap- As may as you need
  • Mixed Salad Greens
  • Stir fry sauce, e.g. Szechuan sauce

Wrap with Tempeh red beans onions 2


Make the white white rice.

Open a can of red beans, and rinse out the liquid that they came packed in.

Chop or slice the tempeh and onions. The next step would be to add the peanuts, and red beans.

Add Szechuan sauce to taste, with a bit of water.

Simmer over low heat, stirring occasionally, for 5 minutes.

Lay out the whole grain wrap on a plate; line with salad greens.

Add white rice, and then the stir fry. Serve.
